The paper aims to reassess the entire architectural and archaeological evidence of the southern part of the sanctuary of Zeus Olympios. This includes the oikos near the SE corner of the big temple (with two building phases dated respectively to the mid-6th century and to the first half of the 5th century), and the area with a large pool and two halls located to the south. This is equipped with a complex drainage system connected with two big cisterns. All these structures can now be referred to as a coherent building program carried out from 480 to 450 B.C. This article addresses the impacts of differential preservation in an alkaline shell midden (fig. 1) overlying an acid soil which does not allow bone to survive. This midden accumulated over an extended period and displays unusual traits attributable to practices of a ritual nature (Le Bihan et Méniel, 2002). Excavation extended to approximately 1000 square metres (fig. 2). Bone was collected on a quarter-metre grid by individual context (fig. 3). Some 35,000 animal and bird bones were recovered; fish bones, which were very numerous, are presently still under study. Metal hoards are emblematic discoveries of European protohistoric societies and therefore an extremely dynamic research theme. However, even though there are many synthetic studies concerning Bronze Age practices, they are much less frequent concerning Iron Age deposits. In fact, since 1995 (Kurz 1995), no synthetic inventory on this subject had been carried out despite the regular increase in the number of discoveries since the development and multiplication of preventive archaeological excavations.
